We are very pleased to announce the release of the latest IDF Internal Newsflash.

As a Codex Observer Organization, IDF monitors and provides scientific expert input to Codex work. This Newsflash focuses on items of particular importance to the global dairy sector discussed at the 35th session of the Codex Committee on Methods of Analysis and Sampling (CCMAS) held on 3-7 March 2014, featuring:

- CCMAS Endorsement of revised IDF/ISO protein calculation method

UNVEILING THE CRUCIAL ROLE OF SALT IN THE MANUFACTURE AND RIPENING OF CHEESE

Brussels, 1 April 2014 - Understanding the role of salt in the cheese making process is crucial in order to explore new sodium reduction strategies. The International Dairy Federation (IDF) has released a monograph on “The Importance of Salt in the Manufacture and Ripening of Cheese”, with renowned experts in the field having compiled the latest scientific knowledge available. 

This Technical Specification specifies a method for the determination of the dispersibility in water of instant dried milk. The method is applicable to instant dried skimmed milk manufactured by either the “straight-through” or the “re-wet” process and also to instant dried whole milk.

Detection of inhibitors and antimicrobial residues in milk and dairy products by screening methods - Guidance on preparation of the test portion.

This edition of the Newsbrief has a special focus on events as valuable platforms for the exchange of ideas, opportunities for networking and presenting the latest research and technological advancements. We also take a look at IDF's latest publications, articles and factsheets.

DIAAS, Digestible Indispensable Amino Acid Score for assessing protein quality, will be fully endorsed upon completion of a programme of research to confirm the animal assay and to create a database of standard protein food values. In the interim, DIAAS can be estimated using published faecal crude protein digestibility values.

Executive Summary

• The nutritional value of a dietary protein source relates to the delivery of indispensable amino acids to the body

• The content, pattern and bioavailability of indispensable amino acids determine the quality of the protein

• Methods for measuring protein quality assess the ability of a dietary protein to meet human requirements for indispensable amino acids1

• Digestible Indispensable Amino Acid Score (DIAAS) is a new assessment method that more accurately measures protein quality

• DIAAS was recommended by an FAO expert consultation on protein quality2

• DIAAS is based on the ileal digestible individual indispensable amino acids in the dietary protein relative to human reference amino acid requirement pattern

• True ileal digestibility of individual amino acids is the most accurate measurement of digestion and absorption of dietary amino acids

• The protein quality score is determined by the lowest ratio of digestible indispensable amino acid content to the corresponding  indispensable amino acid in the reference pattern

• Scores may be greater than 1 (or 100%) if the protein contains a relatively high content of indispensable amino acids recognizing surplus amino acids in higher quality protein sources

• Values above 100% should not be truncated except where calculating DIAAS for protein or amino acid intakes for mixed diets or sole source foods2

• Dairy proteins are higher quality and have DIAAS values greater than 100%

• Milk powder has a DIAAS (%) of 1222

• Protein quality scores may be important in the future for adjusting/ informing/understanding the available protein or amino acid content of foods

• High protein quality foods such as dairy can be used to complement foods of poorer quality for cost effective and efficient use of available foods

• DIAAS will be fully endorsed upon completion of a programme of research to generate a database of indispensable amino acids ileal digestibility values for standard protein foods.

After the last two symposia, dealing with Safeguarding Dairy Food Safety and the Role of Standardization including case studies of trade issues, this year's symposium is focused on the Contribution of Analytics to Safeguard our Dairy Cows' Health and Healthy Dairy Products.

The intention is that IDF/ISO Analytical Week together with ICAR Biennial Congress and INTERBULL are functioning as a melting pot in the background. These combined events attract specialists in the field of Analytics as well as experts in “digesting” and applying data to enhance information quality and information density for dairy herd managers in the frame of a health oriented DHI system, which should lead to fruitful interdisciplinary discussions – to the benefit of the dairy farmers.

The 7th IDF International Symposium on Sheep, Goat and other non-Cow Milk will take place in Limassol, Cyprus, on 23-25 March 2015 - Save the date!

The overall objective of the Symposium is to provide a renewed vision of knowledge on husbandry and milk production, technology, chemistry, physics, microbiology and nutrition and to highlight the significance of markets and appropriate policies as they have evolved since 2011.

The event is addressed to scientists and other professionals involved in the sheep, goat and other non-cow dairy sectors, including milk producers, dairy processing industry, trade associations, academia, research institutes and governments. The Symposium will be a platform for exchange of knowledge and information among international experts in the field.

Brussels, 06 February 2014 - IDF and ISO have joined forces to expand the scope of an international standard used worldwide in the dairy industry to measure the protein content of cow's milk. The Kjeldahl method* now encompasses milk from other species as well as internationally traded dairy products covered by Codex standards. The revised Standard reconfirms the crucial role of the Kjeldahl method in trade harmonization and enhances consumer protection safeguards.

In October 2014, the International Dairy Federation’s (IDF) annual World Dairy Summit will take place in Tel Aviv. Around 1,500 participants from all over the world are expected at the David Intercontinental Hotel.

This edition of the Newsbrief has a special focus on the importance of collaboration, and its particular relevance to IDF's work in the fields of sustainability and standard setting. We also take a look at IDF's upcoming events.

This 'Summit Special' edition of the Newsbrief covers highlights from numerous IDF expert committee meetings that took place in Yokohama, Japan, before the IDF World Dairy Summit 2013. Find out more about the IDF expert network and programme of work.
