As a Codex Observer Organization, IDF monitors and provides scientific expert input to Codex work. This Newsflash focuses on items of particular importance to the global dairy sector discussed at the 35th session of the Codex Committee on Methods of Analysis and Sampling (CCMAS) held on 3-7 March 2014, featuring:

- CCMAS Endorsement of revised IDF/ISO protein calculation method

- Process of updating references to Methods of Analysis

- IDF's contribution to the development of the Principles for Use of Sampling and Testing in International Food Trade

UNVEILING THE CRUCIAL ROLE OF SALT IN THE MANUFACTURE AND RIPENING OF CHEESE

Brussels, 1 April 2014 - Understanding the role of salt in the cheese making process is crucial in order to explore new sodium reduction strategies. The International Dairy Federation (IDF) has released a monograph on “The Importance of Salt in the Manufacture and Ripening of Cheese”, with renowned experts in the field having compiled the latest scientific knowledge available.
